The Achievers

Meet the Students Behind This Journey

These nine dedicated B.Sc. (Hons.) Agriculture 4th Semester students invested over seven months of patience, scientific discipline, and hands-on effort to bring this remarkable fruit wine project to life: Student 1 Vinay Shivhare B.Sc. About the Achievement

A Proud Milestone in Practical Learning

In a remarkable demonstration of patience, scientific discipline, and hands-on learning, the B.Sc. (Hons.) Agriculture 4th Semester students of Career Point University, Kota have successfully prepared and completed the ageing of fruit wines — fermented fruit juices — as part of their Horticulture course curriculum. After more than 7 months of dedicated hard work, the students completed the entire journey from fresh fruit selection to quality wine ageing, covering every critical step of the enological process. The wines were preserved using organic, plant-based preservatives, ensuring natural preservation while maintaining quality and health-friendly characteristics. “A remarkable journey from fresh fruits to quality fruit wines — showcasing the practical application of post-harvest technology, value addition and processing in the truest sense.”

Fruits Used

Six Fruits, Six Unique Wines

The students selected six diverse fruits, each bringing unique flavour profiles, sugar content, and fermentation characteristics: 🍊 Mandarin Citrus-rich aromatic wine Golden Wine 🍓 Strawberry Sweet vibrant rose wine Blush Wine 🍇 Grape Classic fermented wine Classic Wine 🍌 Sapota Earthy tropical wine Tropical Wine 🪝 Aonla Vitamin C rich wine Herbal Wine 🍄 Beet Root Deep ruby antioxidant wine Ruby Wine

The Process

From Fresh Fruit to Aged Wine — Every Step Mastered

Every step was meticulously carried out by the students, providing invaluable hands-on experience in Enology: 1 Fruit Selection & Processing Careful selection of fresh, ripe fruits followed by washing, peeling, crushing and juice extraction using standard post-harvest techniques. 2 Brix Analysis Sugar content measured using Brix analysis (refractometer readings) to determine initial sugar levels critical for controlling fermentation. 3 Fermentation Juices inoculated with yeast cultures and allowed to undergo controlled alcoholic fermentation with regular monitoring of temperature, pH, and Brix. 4 Filtration Systematic filtration to remove sediments, clarify the liquid, and improve visual appearance, texture, and overall wine quality. 5 Organic Preservation Wines preserved using organic, plant-based preservatives ensuring natural preservation while maintaining quality and health-friendly characteristics. 6 Ageing Wines aged over several months allowing complex flavour compounds to develop, acids to mellow, and quality profile to mature — completing the 7-month journey.

Heartiest Congratulations!

To all nine B.Sc. (Hons.) Agriculture 4th Semester students and to Dr. Mahaveer Suman for his exceptional guidance and mentorship throughout this seven-month journey. Career Point University, Kota is proud of your outstanding achievement. We wish you continued success in your academic and professional journey in agricultural sciences.
